shrimp spanikopita

Shrimp Spanikopita.
This recipe is lovingly and gratefully inspired by Mexitaly‘s Seafood Spanikopita Pizza.

It is not fully paleo because it has some cheese in it, but I suppose you could increase the amount of pesto and omit the feta if you were straight-up cave eating. The measurements are approximate; this is Brian’s estimation of the magic he performed tonight.

1 tsp olive oil
1 lb of fresh shrimp (we normally get the 16-20s), peeled and deveined, lightly sprinkled with a bit of your favorite seasoning salt
1 tsp minced fresh garlic
1 tsp prepared pesto
4 oz crumbled feta
12 oz of fresh spinach leaves

Put the olive oil in a frying pan and sauté shrimp until nearly cooked through. Throw in feta, throw in spinach, throw in garlic and pesto. Cook until spinach is to your wilted-liking and the shrimpies are orange and wonderful.

Serves about two people. Well, it was three servings, but I ate two of them.
