re-entry raspberry muffins

Raspberry Paleo.

Hoo, boy. Re-entry is hard. After a full week of eating normal people food (read: pasta, peanut butter and jelly sandwiches, potato chips, and beer) and a full week of non-WOD exercise (which included soccer on the beach, volleyball in the backyard, and dragging beach chairs and boogie boards three blocks to the ocean every day), I feel pretty gross.

So, I’m making some paleo muffins, based loosely on Juli’s recipe on PaleOMG, but with some small changes:

3 eggs
1 C almond meal
1 C almond butter
1/3 C applesauce
1/3 C honey
1/3 C coconut flakes
1/3 C flaxmeal
1/2 tsp baking powder AND soda
shake of salt, shake of cinnamon
1 C fresh raspberries

Mix it all together except the raspberries. Place 4 raspberries in the bottom of the muffin liner, dump some batter in, place a few more raspberries in, dump some more batter. I do it this way because the last time I made them, I mixed the raspberries IN and they just turned into mush and made the muffins too wet.

350 for 20 ish minutes.

And a small prayer that after a few days, your guts and skin will return to normal, and your strength and motivation to move will return. Hoo, boy.
