Apologies for the multiple cookie recipes. I’m slowly experimenting to see how low I can go with the sweeter and oil before they move from “cookie” to disgusting. My taste-testers, however, approve of the following instantiation:
Combine in a small bowl:
1 Tbsp coconut oil (micro for 15 seconds to soften it)
2 Tbsp dark raw honey
1/4-1/3 C unsweetened applesauce
1 tsp vanilla
Combine in a larger bowl:
1 C + 4 Tbsp almond flour
1/4 C unsweetened coconut flakes
1 tsp salt
1 tsp baking powder
Combine wet and dry ingredients.
2 squares of a Lindt 90% Cocoa Bar
about 1/4 C dried cranberries
Combine chopped goodness into dough.
Then sprinkle about 1/4 C coconut flakes onto a cutting board. Roll a generous teaspoonful of the dough around in the coconut flakes, coating the ball well. Smoosh into cookie shape. Place on sheet.
Cook @ 325 for 12 minutes.
